The study investigates the determinants of the output of cassava products in an attempt to bridge the rapidly increasing demand and supply gap in cassava processing in Ogun State, Nigeria. Multi-stage sampling procedure was used to select 160 respondents. The data required for the study was obtained from primary sources. Data was analysed using frequencies, percentages, multiple regression analysis and rate of return on investment. The result shows that the majority of the cassava processors were female and between the age of 41 and 50 years. The coefficient of cost of cassava roots shows that if the cost of cassava roots increases by ₦1, the output of processed cassava products will decrease by 0.012Kg. This implies that an increase in the cost of cassava roots results to decrease in processed output. The return per naira on investment in the processing of cassava roots into different products gave 44 kobo for garri, 50 kobo for cassava flour, 42 kobo for fufu and 34 kobo for starch. This implies that for every N1 invested in garri, cassava flour, fufu and starch processing, it gives a profit of 44 kobo, 50 kobo, 42 kobo and 34 kobo respectively, showing cassava processing as a profitable venture in the area. The result further indicated that processing cassava roots into cassava flour is more profitable compared to garri, fufu and starch. For more profitable returns, the study therefore recommended among others, the need for an intervention to have a cassava production efficiency and also provision of a good road network for cassava farmers which will reduce the cost of cassava roots at both the farm gate and retail markets
